Recipe of the DayNorwegian Jarlsberg Torsk
The Norwegian culinary tradition is one of balance between sea and land. Honor both with this fusion of fish and dairy.
Serves 10
2 Tbsp – Butter
10 Fillets – Cod
1 Tbsp – Salt
1 tsp – White pepper
3 count – Tomatoes, sliced
3 count – Leeks, sliced
½ lbs – Jarlsberg Cheese, shredded
1 cup – Half and HalfButter the inside of a baking dish. Add the cod fillets. Sprinkle the salt and pepper over the filets. Arrange the tomato and leeks on top of the cod. Sprinkle on the cheese and add the half and half. Bake in a 350° F oven for 35 minutes.
On a typical day at Skogfjorden, you can count on smørbrød for breakfast and the task of making some extra to wrap in a matpakke for the matpause that comes around noon. The big meal of the day, middag, typically includes some savory meat or succulent fish with some form of potato and colorful vegetables. The evening meal may be a gryterett (a kind of casserole) or hearty salad. It is typically followed by a sweet treat like fresh bær with cream or Norway’s famous fyrstekake.
